Awesome Baked Potatoes

Okay this is a recipe from Cook Yourself Thin and let me tell you ama-ZING!
Calories 420 makes 2 Servings
Ingredients
2 Medium Sweet Potatoes
1 tsp EVOO
1 small onion
1 clove garlic minced
1 bunch or bag baby spinach
2 slices bacon
4 oz cream cheese
1/4 cup low fat buttermilk
1 tsp salt (I didn’t use this)
1/4 tsp black pepper
1 tsp vegetable oil (I didnt use this)
2 tbsp Parm

Pop your potatoes in the preheated oven at 350 for 45 minutes (high altitude? 55 mins)
Saute onion in EVOO add garlic when all is looking good add chopped up spinach, place top on pan and let wilt for 5 minutes and remove from heat
Meanwhile sautee bacon in another pan- lay out to cool when finished cooking (you don’t need this if you are a vegetarian 😉 )
When your potatoes are cooked let them cool for 5 minutes. Slice each in half and scoop out the centers- place this in a bowl to (or food processor) add the rest of your ingredients and blend or process scoop back into your potato skins, add cheese and bacon voila
*oh I added a lil fat free sour cream too*
