Meal Plan Monday

Now that school is out and summer is in full swing (just ask my kids who are spraying each other in the backyard and refuse to take a nap!) the insanity of meal planning has shifted from Friday to Monday and shopping happens on Friday. I try to do a bigger shop on the Friday of Coreys paychecks so that I have my basics squared away for the two weeks (I never shop for more than two weeks because if it is in the house it will get eaten).

This week was the second week of Coreys paycheck so I bought my *extras*. My Menu looks like this

Yum! Some Delish Recipes :D

Has anyone noticed I totally blow at catchy titles? Ya, me too 😦 Awe well I am sure it will be okay!
So, I have been the sucktastic queen of the kitchen, as in we have had take out and pizza more times than I care to mention in the last couple weeks. I lost my mojo, couponing, meal planning and cooking just weren’t working for me 😦 Totally a bummer, I think a big part that I became SOO OBSESSED with frugal that I was sad with the lack of really yummy, quality ingredients! Well, Mama got her Mojo back πŸ™‚ Yay buddy!

This week Jay had a play date with a girl who is not big on the eating side of things, so I thought who doesn’t love PIZZA?! So…off I went on a search for a quick and easy dough, I wanted to veer from what is the norm for me and this is what I found on food.com
I added the ingredients from the bottom up and this made 3- 2 people pizzas! So fun, the kids made their own, and soo yummy I topped mine with sweet onions, mex cheese blend (cus that is all I have on hand) and banana peppers

Directions:

    SOME PIZZA TOPPING IDEAS.

    Caramelised onions and roasted garlic.
  3. 3
    Mozzarella cheese, Camembert, Romano and Feta (for a really, really cheezy pizza!).

    Equal parts of basil pesto and olive oil mixed together with Parmesan or Romano cheese.

    Plus some roughly chopped sundried or SEMI-dried tomatoes, sliced black olives and LOTS of grated Mozzarella cheese, salt and lost of freshly ground black pepper!

    Cranberry jelly, shredded chicken, sliced Brie!

    Mozzarella cheese, shredded chicken and sliced avocado!

    Place all the above ingredients in the order I have listed into the bread machine.

    Select the dough cycle and press start!

    When the dough cycle is complete, take the dough out of the machine and place in well greased bowl, and roll the dough around (in the bowl) thus’coating’ it in oil.

    Cover and leave to rise in a warm place for about 1/2 an hour.

    Knead the risen dough lightly.

    To shape and bake: roll the dough into a circle.

    Place on well greased baking tray or pizza pan.

    Then add a topping of your choice and bake at 225’C. *I baked at 450

    NOTE: for a nice crisp and very thin pizza, bake BEFORE adding the topping AND after!



Last night I opted to continue on my drive out of my comfort zone (IE yummy gourmet-esque foods) and made a Tator Tot Casserole! I am personally opposed to all casseroles because of a horrible Tuna experience over two decades ago, I couldn’t eat lays chips for a long time afterward either :shudder:
But I hopped on Pinterest and let my fingers take me away

Believe it or not, it borders on healthy! 

2 cups cream of anything soup with chicken bullion
2 oz velveeta
1 1/2 Cups milk
8-10 Cups broccoli florets
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked black pepper
1/8 teaspoon garlic salt
1/2 bag tater tots, frozen
1/2 Cup shredded cheddar cheese
2 cubes sweet potato/carrot puree
1. Preheat oven to 375 degrees F. Place soup and milk into a large pot over medium heat. Whisk until smooth and heated through, about 5 minutes. Stir in broccoli and puree and cook for 5 additional minutes to soften slightly. Stir in salt, pepper and garlic seasoning. Pour mixture into 11Γ—7 inch baking dish that’s been sprayed with cooking spray. Top evenly with tater tots and cheese; bake for 20 minutes then cover with foil. Bake for an additional 15 minutes with dish covered with foil. Remove from oven and serve.

That was Refeshing

As I am sure y’all noticed I took a little break (this was from meal planning and any good cooking too) and it was def. needed and well, appreciated. I tend to loose sight of who I am and concentrate on what I think other people want me to be 😦 So I took a little break and went shopping with my friend Nichole and got Emmer a retro pbk kitchen for $20 (I’ll post pics in like ten minutes) and some new sweaters for myself and then I took the kidlets and the hubs and drove to Michigan which is where I am posting to yall from! I am originally from a small town in Michigan so we are here to visit for Thanksgiving and its just lovely to see all my awesome family (aside from Amanda whom should be here tomorrow)! Today we are lazing around at least for the AM portion of the day, thinking about heading to the mall to let the kidlets play in a few and then family time this afternoon! One thing I have noticed about Michigan is that it is really not easy to be a vegetarian! That is a okay though because I know how to work around it and I am going to making a yummy veggie dinner for everyone and butternut squash risotto for Thanksgiving!
Other things I have noticed about Michigan the oxygen rich air has provided me with the ability to get my mile down to 10 minutes from 11:47 when I left on Saturday! I am so psyched to go for a run tomorrow I am thinking a solid 3 miles (did 2.7 yesterday in 27 minutes) and then 4 on Friday! I was hoping to do 6 in an but its kinda hilly here and its wreaking havoc on my solias’ which is pathetic and tells me I need to run out side in Colorado because the treadmill is doing me a serious a disservice and I will never be able to finish tough mudder at this rate! Hmm well I think that is all that is fit to print at this point! More to come latter from our fun filled trip πŸ™‚

Where has the week gone?!

It’s WEDNESDAY!!! Can you Believe that? I certainly dont want to believe it! I am sitting here awe-struck in where yet another week has gone (or at least half a week). I am sure it has everything to do with the Spooky Holiday on Monday than anything else. CJ had Monday off so we trick or treated and played and just over all enjoyed our day (including a very FUN Kindie Class Party)

Tuesday we rocked the lazy day Jayden sounds like he is coming down with cold (the icky stuffy nose sound) and we had the chance to talk about operation christmas child, the kids will be putting together boxes, the youtube video brought tears to Jaydens eyes! I am so amazed by his heart ❀

Today….well today its snowing, and a late start day! We were going to Playdate with the lovely Becky, but I am thinkin’ if Jay is sick it will be a lazy day with some Pastina for lunch (and yes a recipe to go with!) and lazy day antics…or home work, playing in the toy room and lots of baking…if he is NOT sick then we will be rockin’ the snow outside *brr* and then dress to impress at school πŸ™‚ with a recipe for candy cookies

RockStar Review Wednesday…The Cleaner Plate Club!

Or not so much….I have tried multiple recipes from this book, and every single one has been an epic fail! I tried the slow cooker oatmeal and it was more like liquid vomit meal, nasty! I would very much not ever, ever, ever suggest this book! In fact I am debating how it even got published 😦 
Normally I would write a review and then include a yummy recipe as my closer from the book but since I don’t actually like any of the recipes I will be including a yummy recipe not from the book!
It is massively cold in Colorado today (as in fucking snowing BRRRR BRRR BRRRR) I am not going outside, not driving to school, not doing anything. Okay well I need to feed the kids and fold laundry and shit, but what is better than cookies in snow? Nothing you say!? I agree, so try these out they are tdf yummay

Ingredients

  • 2 cups sugar
  • 4 tablespoons cocoa
  • 1 stick butter
  • 1/2 cup milk
  • 1 cup peanut butter
  • 1 tablespoon vanilla
  • 3 cups oatmeal
  • Waxed paper

Directions

In a heavy saucepan bring to a boil, the sugar, cocoa, butter and milk. Let boil for 1 minute then add peanut butter, vanilla and oatmeal. On a sheet of waxed paper, drop mixture by the teaspoonfuls, until cooled and hardened.

Now for some good eaten! I made some tdf Indian food the other night and now you can too!
 Rasa Kayi
4 oz carrots, scrubbed and cut into 1 in pieces
4 oz potatoes, scrubbed and cut into 1 in pieces
4 oz green beans, scrubbed and cut into 1 in pieces
3 tbsp veggie oil
2 onions diced
1/2 tsp chili powder
1/2 tsp coriander
1/2 tsp turmeric
4 oz cauliflower seperated into florets
1/2 cup coconut milk
Curry Paste like this 
Heat oil in a large pan, add onion, cook until the onion softens. Add the carrots and chili powder, coriander, turmeric and salt to tast. Mix well, lower hear and add the potatoes, cover and cook for 10 minutes
Add the cauliflower and green beans together with the curry paste and mix well. Cook, covered, for another 10-15 minutes 
Remove the pan from the hear and slowly add the cocont milk, stirring to blend well, serve hot.
Poories
1 lb 2 oz chapatti flour or all purpose flour (I used all purpose)
2 tsp salt
1 tsp sugar
1 tbsp ghee or oil 
vegetable oil for ddep frying
2 tbsp vegetable oil for rolling
1 tsp carom seeds
1 tsp black onion seeds
Mix together flour, salt, sugar, and seeds in a bowl. Rub in the glee with your fingers until it is thoroughly blended
Make a well in the center of the flour and pour in 1 cup water little by little mixing to make a stiff dough, work the dough well with your hands, then cover for 15 minutes
Divide the dough into 20 pieces and cover once more with the damp cloth. Work one piece at a time, keeping the rest covered
While oil is heating in your wok, roll each piece of dough into a smooth ball: apply a little oil to each ball, using a rolling pin, roll out into a disk about 4 inches in diameter
Deeo fry the breads for 1-2 minutes per side, drain on a paper towel and enjoy 

Rock Star Review Wednesday! The Sneaky Chef to the Rescue

I wrote this review and recipe last night planning on doing a quick send button and having it up and running this morning and I am really glad I didn’t. Today was the equivalent of an emotional cleanse and anxiety hell. 
I started the day with Brett peeing on the floor, then my bed, then the couch; now little dude I get that you are sick but for fucks sake you are FOUR YEARS OLD! You have been potty trained for 2 years and yes that porcelain whole in the bathroom is for you to pee in, thank you! So, off with the sheets and on the with crazy day…Jayden was apparently doing everything in his 6 year old super power to make us late to school…like screaming MOM I LEFT MY BACKPACK as we pull up to the school, for realz dude, so we turn around grab the bag (‘cus I prepared for this, and what!) off to school, on time thank you very much! Off to the park for a few before heading to hippie hell erm Boulder for Bretts allergy appointment. Park goes well, we are getting in the car and I smell it…poop, okay well lots of changing and then we off and only 4 minutes late to the doctor! Get to the Doctor and meet my mother in law there, she takes Emmy and I take Brett…2 hours later Brett is sadly still allergic to eggs, but hey we get a consolation prize…a NEW EPI PEN! What!? Ya, that’s fucking awesome :rollseyes: and a trip to get Brett’s blood drawn! Woo Hoo! Well, we did get an awesome lunch treat from Grandma, and Halloween costumes!! It really wasn’t a bad day…it would have been perfect had I not had to park my Dodge Ram into a smart car sized parking space…for some reason Boulder doesn’t quite get that they may be green but some of us live in farm country!

So, this book isn’t actually what I would consider Rock Star it’s like Rock Star quality in Emo glasses…just not quite there 😦 There are bits and pieces I absolutely love…like the sneaky Purees…L.O.V.E those! The recipes are actually really, really yummy after I tweaked them, any recipes that calls for a ‘make ahead’ use an ice cube amount (I froze mine so it would be erm…lazier…to measure)

Spring Rolls with Lemongrass Dipping Sauce and Cucumber Salad
Adapted from Cook Yourself Thin
Makes 6 rolls


LemonGrass Dipping Sauce
1/2 cup white wine vinegar
12 cup honey
1 stalk lemon grass
2 garlic cloves minced


In a small stainless steel saucepan over medium heat, combine vinegar and honey. Bring to a boil and reduce to a simmer. Cook for 10 minutes, remove from heat and add garlic and let steep until cooled. Add minced lemongrass right before serving


Cucumber Salad
1 English Cuc
1 tbsp sesame seed oil
1 tbsp apple cider vinegar


In a small separate bowl, whisk together the sesame oil and vinegar, season to taste with salt. Drizzle the dressing over the sliced cucumbers and toss, refrigerate until ready to serve


Spring Rolls
1 tbsp sesame seed oil
1 tbsp minced garlic
1 pound shrimp
1 tbsp soy sauce


Over medium heat, place the sesame oil, minced garlic and shrimp into a pan, cook until the shrimp are pink and not too firm, and reduce. Add soy sauce and cook another minute let cool and set aside


For assembly
6 piece lettuce (I used Bib)
2 oz red bell pepper sliced julienne
1/2 large carrot 
2 cups curried rice noodles (recipe tomorrow)
2 oz snap peas, julienne


Place some red pepper strips, shredded carrots, curry noodles, snap peas, three or four shrimp and a drizzle of lemon grass dipping sauce on each lettuce piece, pick up, eat and enjoy





frugal….

Okay, when you think about being frugal what do you think of?

I think of Ramen noodles and eggs, I think of kraft mac and cheese and some foods you just don’t want to eat. I think of menu plans, budgets, and misery…is this really what all the rave is about? I mean are you frickin’ serious? It seems so…square, for lack of a better word. Next, I will drive a monotonous mini van, have 2.3 children and have a FUPA…ARE YOU FRICKIN’ SERIOUS? Ya, I wouldn’t want to be that person either!!!

I totally rock my coupon book but I do not have a FUPA or a mini-van, I don’t eat mac + cheese (although I love a designer Macaroni and Cheeses) and I will not cut any of my kids into fractions but I love, love, love menu planning…because I am learning how to make absolutely amazing cuisine, I mean for real I had home made Thai Peanut Curry with rice noodles and Tilapia for dinner Saturday and it cost me like $7 for my ENTIRE family and I am using left overs and making Spring Rolls for dinner, ya beat that!

For anyone wondering if being frugal means being that person, well it doesn’t any more, with the wonders of the Library and Google we really have no reason not to rock the frugal, and while I do budget I know where all my money is at the end of the month, do you?

Awesome Mac and Cheese Muffins

Ingredients
1/4 cup Orange Puree (will be up Wednesday)
2 cups cooked Mac
2 cups shredded yellow cheese
1/2 minced onion sauteed
1 minced bell peppers
1/4 cups butter
4 tablespoons flour
4 cups milk

Pre-Heat oven to 350
Saute Onions and peppers
Mix all the ingredients in a big bowl
Put in lined cupcake pan
Sprinkle an additional 1 tbsp of cheese on each muffin
Cook for 21 minutes
When done let cool for 10 minutes
Remove carefully
*Awesome for Freezing for later use*

Calories 155 per muffin
