Park and Play 3 *Wicked Abs!*

Okay so my abs are far from wicked but I was helping CJ workon my MIL house yesterday and I totally managed to do it with out pussing out which is uber huge for me because well frankly I have spent years out of shape and rather lazy :blush: I also jumped on the tramp with the kids repeatedly and I went for an hour long run this morning IN THE MOUNTAINS, so like up hill the whole first half!!!!!!!!!!! I about died, I dont think I have even coughed so much before :-/

I will be revamping come winter but I will leave friday open for just body updates, my body tends to be one of my biggest and most painful struggles in life, as a mother and a woman. I hope to over come that with basic exercise and ledning my self to health so my kids can have a healthy and fun mama

Meal Plan Monday

Now that school is out and summer is in full swing (just ask my kids who are spraying each other in the backyard and refuse to take a nap!) the insanity of meal planning has shifted from Friday to Monday and shopping happens on Friday. I try to do a bigger shop on the Friday of Coreys paychecks so that I have my basics squared away for the two weeks (I never shop for more than two weeks because if it is in the house it will get eaten).

This week was the second week of Coreys paycheck so I bought my *extras*. My Menu looks like this
Monday *breakfast* Waffles with strawberries *lunch* crackers with melted cheese and lunch meat *dinner* veggie fajitas
Tuesday *b* oatmeal with protein powder *l* PBJ *d* stir fries
Wednesday *b* pancakes *l* left overs *d* small group (We are taking mozzarella and tomato salad with sweet basil from my new herb garden)
Thursday *b* oatmeal with blueberries *l* cheese crackers and meat *d* shrimp and rice with mango
Friday *b* pancakes and grocery shopping

I can not believe its 2012~ Can you? I am excited for the prospect of new and exciting ventures, and goals!! I ❀ me some goals πŸ™‚ LOVE LOVE GOALS!
This Christmas vacay has been cray cray! Okay, I promise I won’t ever say cray cray again. We found out we were expecting and then lost the baby, well really it was a ball of fetal cells…not that I particularly believe that, but God came to me in a dream and it was really intense and so much that I am actually working on the really intense post to go with it! I know that is kind of a cliff hanger but God really is working with us in a huge way!

Okay any way the reason for todays post was not just another barely there keep holding post but really a revue of our budget and what that is looking like for us this year.

The Holidays are (almost) Over!

And to that I say woo hoo! I love the family and camaraderie of the holidays but they leave me feeling overwhelmed and anxious 😦 Thankfully they are almost over!! Jayden will be back at school next week, which makes me really sad! I am goinna miss my bug a boo πŸ˜₯ but I know he will love it and we will be back to gymnastics which all the kids need and our schedules will be normal again, CJ hasnt been working much this past week leaving what mini version of a schedule I had self imposed flying out the window but it has been fun spending time coloring on the windows and playing farm with the kiddos! I am super neglectful of this here blog when I have such cute people to pay mind too! I love doing it though πŸ™‚ Amazing! I am grateful for my family, for my time with them and for holiday breaks :love:

Yum! Some Delish Recipes :D

Has anyone noticed I totally blow at catchy titles? Ya, me too 😦 Awe well I am sure it will be okay!
So, I have been the sucktastic queen of the kitchen, as in we have had take out and pizza more times than I care to mention in the last couple weeks. I lost my mojo, couponing, meal planning and cooking just weren’t working for me 😦 Totally a bummer, I think a big part that I became SOO OBSESSED with frugal that I was sad with the lack of really yummy, quality ingredients! Well, Mama got her Mojo back πŸ™‚ Yay buddy!

This week Jay had a play date with a girl who is not big on the eating side of things, so I thought who doesn’t love PIZZA?! So…off I went on a search for a quick and easy dough, I wanted to veer from what is the norm for me and this is what I found on food.com
I added the ingredients from the bottom up and this made 3- 2 people pizzas! So fun, the kids made their own, and soo yummy I topped mine with sweet onions, mex cheese blend (cus that is all I have on hand) and banana peppers

Directions:

    SOME PIZZA TOPPING IDEAS.

    Caramelised onions and roasted garlic.
  3. 3
    Mozzarella cheese, Camembert, Romano and Feta (for a really, really cheezy pizza!).

    Equal parts of basil pesto and olive oil mixed together with Parmesan or Romano cheese.
  5. 5
    Plus some roughly chopped sundried or SEMI-dried tomatoes, sliced black olives and LOTS of grated Mozzarella cheese, salt and lost of freshly ground black pepper!

    Cranberry jelly, shredded chicken, sliced Brie!
  7. 7
    Mozzarella cheese, shredded chicken and sliced avocado!
  8. 8
    Place all the above ingredients in the order I have listed into the bread machine.

    Select the dough cycle and press start!

    When the dough cycle is complete, take the dough out of the machine and place in well greased bowl, and roll the dough around (in the bowl) thus’coating’ it in oil.

    Cover and leave to rise in a warm place for about 1/2 an hour.

    Knead the risen dough lightly.

    To shape and bake: roll the dough into a circle.

    Place on well greased baking tray or pizza pan.

    Then add a topping of your choice and bake at 225’C. *I baked at 450

    NOTE: for a nice crisp and very thin pizza, bake BEFORE adding the topping AND after!



Last night I opted to continue on my drive out of my comfort zone (IE yummy gourmet-esque foods) and made a Tator Tot Casserole! I am personally opposed to all casseroles because of a horrible Tuna experience over two decades ago, I couldn’t eat lays chips for a long time afterward either :shudder:
But I hopped on Pinterest and let my fingers take me away

Believe it or not, it borders on healthy! 

2 cups cream of anything soup with chicken bullion
2 oz velveeta
1 1/2 Cups milk
8-10 Cups broccoli florets
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked black pepper
1/8 teaspoon garlic salt
1/2 bag tater tots, frozen
1/2 Cup shredded cheddar cheese
2 cubes sweet potato/carrot puree
1. Preheat oven to 375 degrees F. Place soup and milk into a large pot over medium heat. Whisk until smooth and heated through, about 5 minutes. Stir in broccoli and puree and cook for 5 additional minutes to soften slightly. Stir in salt, pepper and garlic seasoning. Pour mixture into 11Γ—7 inch baking dish that’s been sprayed with cooking spray. Top evenly with tater tots and cheese; bake for 20 minutes then cover with foil. Bake for an additional 15 minutes with dish covered with foil. Remove from oven and serve.

Dinner

Ingredients

  • 1 teaspoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3/4 cup uncooked white rice
  • 1 1/2 cups low sodium, low fat vegetable broth
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1 can of canned black beans, drained
  • 1 can of diced tomatoes

Directions

  1. In a stockpot over medium-high heat, heat the oil. Add the onion and garlic and saute for 4 minutes. Add the rice and saute for 2 minutes.
  2. Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 20 minutes. Add the spices and black beans.

As I am sure y’all noticed I took a little break (this was from meal planning and any good cooking too) and it was def. needed and well, appreciated. I tend to loose sight of who I am and concentrate on what I think other people want me to be 😦 So I took a little break and went shopping with my friend Nichole and got Emmer a retro pbk kitchen for $20 (I’ll post pics in like ten minutes) and some new sweaters for myself and then I took the kidlets and the hubs and drove to Michigan which is where I am posting to yall from! I am originally from a small town in Michigan so we are here to visit for Thanksgiving and its just lovely to see all my awesome family (aside from Amanda whom should be here tomorrow)! Today we are lazing around at least for the AM portion of the day, thinking about heading to the mall to let the kidlets play in a few and then family time this afternoon! One thing I have noticed about Michigan is that it is really not easy to be a vegetarian! That is a okay though because I know how to work around it and I am going to making a yummy veggie dinner for everyone and butternut squash risotto for Thanksgiving!
Other things I have noticed about Michigan the oxygen rich air has provided me with the ability to get my mile down to 10 minutes from 11:47 when I left on Saturday! I am so psyched to go for a run tomorrow I am thinking a solid 3 miles (did 2.7 yesterday in 27 minutes) and then 4 on Friday! I was hoping to do 6 in an but its kinda hilly here and its wreaking havoc on my solias’ which is pathetic and tells me I need to run out side in Colorado because the treadmill is doing me a serious a disservice and I will never be able to finish tough mudder at this rate! Hmm well I think that is all that is fit to print at this point! More to come latter from our fun filled trip πŸ™‚

How Did You Lose The Baby Weight?

I have lost like 15 pounds in the last bit and I get a lot how’d you lose the weight or you look like you have lost weight, whats up?
Well here are two of my favorite secrets :)….
I don’t have the time to hit the gym every day or every week for that matter (as has been proven after two week long rounds of sick kids) so I rock the Pop Pilates and I eat lots and lots of Bon Bons πŸ˜€
Okay pick your jaw up off the floor! Yes, I eat Bon Bons and I freakin LOVE them, chocolate and peanut butter…and only 15 calories hellz to the yea!

Sneaky Bon Bon
Ingredients
Topping 3 tbsp sugar

2 orange puree cubes
1/4 cup creamy peanut butter
1/4 cup wheat germ
1/4 cup nutella
1/2 old fashioned oats

mix all your ingredients (aside from sugar) together
roll into tsp sized balls
roll balls in sugar
freeze
consume 

AK the Right Way

I know from the title this sounds either very gun rights or elitist, it’s neither! I am doing a 6 week running journal on how the Accountable Kids program has or hasn’t worked for us.
Some back ground- I have been pseudo implementing this program for 9 months…9 months of failure…on my part and confusion on my kids part

So, I ordered a starter kit- the book and a board, the boys already have boards so I got one for Emmy because she is eager to flip cards like her brothers!

I read the book, well enough to know I may have chose the wrong career field, I had no idea kids computed things sooo differently than adults. But hey, better late than never…

frugal….

Okay, when you think about being frugal what do you think of?

I think of Ramen noodles and eggs, I think of kraft mac and cheese and some foods you just don’t want to eat. I think of menu plans, budgets, and misery…is this really what all the rave is about? I mean are you frickin’ serious? It seems so…square, for lack of a better word. Next, I will drive a monotonous mini van, have 2.3 children and have a FUPA…ARE YOU FRICKIN’ SERIOUS? Ya, I wouldn’t want to be that person either!!!

I totally rock my coupon book but I do not have a FUPA or a mini-van, I don’t eat mac + cheese (although I love a designer Macaroni and Cheeses) and I will not cut any of my kids into fractions but I love, love, love menu planning…because I am learning how to make absolutely amazing cuisine, I mean for real I had home made Thai Peanut Curry with rice noodles and Tilapia for dinner Saturday and it cost me like $7 for my ENTIRE family and I am using left overs and making Spring Rolls for dinner, ya beat that!

For anyone wondering if being frugal means being that person, well it doesn’t any more, with the wonders of the Library and Google we really have no reason not to rock the frugal, and while I do budget I know where all my money is at the end of the month, do you?

Awesome Mac and Cheese Muffins

Ingredients
1/4 cup Orange Puree (will be up Wednesday)
2 cups cooked Mac
2 cups shredded yellow cheese
1/2 minced onion sauteed
1 minced bell peppers
1/4 cups butter
4 tablespoons flour
4 cups milk

Pre-Heat oven to 350
Saute Onions and peppers
Mix all the ingredients in a big bowl
Put in lined cupcake pan
Sprinkle an additional 1 tbsp of cheese on each muffin
Cook for 21 minutes
When done let cool for 10 minutes
Remove carefully
*Awesome for Freezing for later use*

Calories 155 per muffin
